Health-Conscious "Hobo Dinner"

INGREDIENTS

4 organic grass-fed and finished hamburger patties
(try Applegate Well Carved Beef and Veggie Pairing burgers)
* or other burger (veggie patty, organic ground turkey burger, etc) of your choice

3 cups of fresh chopped vegetables per person/packet
(Ex: 1 cup baby purple potatoes cut into rounds, 1/2 carrots cut into rounds, 1/4 chopped onion, 1/2 cup chopped purple cabbage, 1/2 cup chopped fresh mushrooms, 1/2 cup shelled peas, 1 cup fresh broccoli)

EVOO
spices of your choice (dried or fresh rosemary, garlic powder, salt, pepper) - optional

PREPARE

1.   Prepare your campfire or charcoal grill.

2. Lay out one 2 foot piece of heavy duty aluminum foil horizontally. Layer another 2 foot piece of foil over the top vertically to form a “plus sign” shape.

3. In the middle of the top piece of foil, pour about 1/2 Tbsp EVOO and spread around to coat foil.

4. Place hamburger patty on foil (in the center of the “plus sign” on top of the olive oil). Sprinkle a small amount of spices over hamburger patty (if using).

5. Toss chopped vegetables in 2 Tbsp of olive oil, then layer over the top of the hamburger patty to form a mound. Sprinkle with another small amount of spices (if using).

6. Fold the edges of the bottom piece of foil over the mound. First fold one side up and over, then fold the second side over that.

7. Next fold the edges of the top piece of foil over the mound in the same fashion to form a packet. Make sure the foil is sealed well enough to hold together and avoid leaks.

8. Place the packets on the grill over your lit fire and cook for about 20-30 minutes. To avoid burning or scorching, t is better to cook relatively “low and slow” than to cook over very high heat or a very hot flame.

9. Remove one packet from the fire and carefully peel back foil to check that the vegetables are tender and the meat is cooked through. If necessary, reseal the packet and return to the fire, continuing to check until the meal reaches your desired level of “doneness”.

10. When you are confident that the meals are ready, remove them from the fire, carefully peel back foil, and allow steam to escape and the meal to cool somewhat before serving.

11. Transfer to plate or serve directly from the foil packets and enjoy!
