Vegetable Beef Stir Fry

INGREDIENTS

1 lb organic grass-fed and finished ground beef
2-4 cloves fresh garlic, crushed
1/2 onion, finely chopped
1 inch piece ginger, peeled and minced
1 bunch fresh carrots, washed, trimmed and cut into rounds
1/4 head purple cabbage, chopped into strips
1/2 yellow bell pepper, cut into strips
1/2 package sugar snap peas
1/2 package (or one crown) chopped fresh broccoli
1 bunch of green onions, cut into 1 inch pieces
1 bunch fresh cilantro, roughly chopped
4-6 Tbsp coconut oil
2-4 Tbsp liquid or coconut aminos
1 Tbsp ground mustard
1 Tbsp cumin
2-4 Tbsp toasted sesame oil
1 cup crushed raw cashews

PREPARE

If desired, set oven to 300. Line a baking sheet with foil, spread cashews evenly across, and toast in the oven for a few minutes until just becoming fragrant. Remove from oven and set aside.

1.    Add 2 Tbsp of coconut oil to a large skillet. Set heat to medium-high.

2. Add ground beef, and cook, mashing with a wooden spoon to break up, until meat has just evenly browned.

3. Add crushed garlic, chopped onion, and minced ginger. Cook, stirring, until aromatics have softened and become translucent.

4. Add 2-3 Tbsp aminos, ground mustard and cumin. Stir to coat meat mixture. Cook 1-2 minutes more.

5. Transfer meat mixture to a large bowl and set aside.

6. Add 2 Tbsp coconut oil back to the pan and add carrots and cabbage. Turn heat to medium and cover. Check and stir regularly to prevent scorching, turning down heat if necessary.

7. Once carrots and cabbage have softened but are still semi-firm, add yellow bell pepper, sugar snap peas and broccoli. Stir to combine. Cover, and check frequently, stirring, to prevent scorching and to ensure the vegetables cook evenly. Note that the idea is to capture steam with the lid to cook the vegetables, so don’t uncover (or leave uncovered) too frequently.

8. When all of the vegetables have cooked to desired tenderness, add green onions and 1-2 more Tbsp liquid aminos (if desired), stir to combine, cover, and cook 1-2 minutes more.

9. Remove skillet from heat and combine vegetables with meat mixture. Stir well to combine meat and vegetables.

10. Distribute stir fry amongst plates. Top with chopped cilantro, chopped cashews, and drizzle with sesame oil.

11. Serve and enjoy!
