Japanese Morning Mix

INGREDIENTS
1 packet instant miso soup
1/2 cup cooked brown rice
1 baby bok choy, washed and chopped
1 tsp EVOO
1 Tbsp chopped green onions
2 organic eggs
1/2 Tbsp grass-fed/organic butter
1 tsp sesame oil
PREPARE
1. Heat water and mix in soup packet according to package directions.
2. Add brown rice to a bowl.
3. Add EVOO to medium-sized pan and heat over medium heat. Add bok choy and cook, stirring frequently and covering the pan with a lid in between stirring, until bok coy softens. Add bok choy to the bowl with the rice.
4. Scramble eggs in butter until just set. Add eggs to the bowl with the rice and bok choy.
5. Pour miso soup over rice, boy choy and scrambled eggs. Add chopped green onions and sesame oil as garnish.
7. Serve and enjoy! Great for rainy days. :)
