INGREDIENTS
4 wild salmon fillets
2 Tbsp stone ground dijon mustard
1 Tbsp fresh squeezed lemon juice
1 Tbsp EVOO
1 tsp onion powder
1 tsp garlic powder
1/2 tsp sea salt
3 sprigs fresh rosemary (washed and stems removed)
1. Preheat oven to the broil setting.
2. Line a baking sheet with aluminum foil and place salmon fillets on top skin side down.
3. Combine all other ingredients in a small mixing bowl and mix well.
4. Finely chop the fresh rosemary and add to the mustard sauce
5. Spoon a dollop of sauce onto each salmon fillet and use the back of the spoon to spread the sauce evenly over the fillet.
6. Place the baking sheet in the oven on the bottom rack. Set timer for 17 minutes.
7. Remove fish from the oven when the timer sounds. (You can leave the fish in for one or two more minutes if you desire the top/crust to be slightly more crispy or browned).
