Fiesta Fresh Shrimp Salad

INGREDIENTS: Salad

1 lb fresh cocktail shrimp (cooked, peeled, deveined, thawed/chilled)
1 head romaine lettuce
1 bag spring mix
3 avocados (peeled, pitted, cut into bite-sized cubes)

INGREDIENTS: Cilantro Lime Dressing

2 bunches fresh cilantro
Juice of 4 limes
6 Tbsp olive oil
1/2 Tbsp onion powder
1 tsp sea salt
1/2 Tbsp garlic powder (optional)

PREPARE

1.   Add all dressing ingredients to a food processor and process until smooth.

2. Wash and roughly chop romaine lettuce. Toss together with spring mix and avocado.

3. Divide greens between plates, assemble shrimp on top and drizzle with dressing.

4. Serve and enjoy!

SERVING SUGGESTION

My husband loves to pair this salad with Sesame Blue corn chips. Siete cassava chips cooked in avocado oil are another excellent choice.
