Smoked Salmon Cucumber Rounds with Mustard Dill Sauce

INGREDIENTS

1 package smoked salmon/lox
1 large seedless cucumber (or 2-3 Persian cucumbers)
1 Tbsp Grey Poupon Country Dijon Coarse Ground Mustard
1 Tbsp finely chopped fresh dill
1/2 - 1 Tbsp fresh lemon juice (depending on your taste preference)
2 Tbsp EVOO
1 tsp raw/wild honey (optional)
fresh ground pepper and sea salt to taste

PREPARE

1. Wash the cucumber and slice into thin rounds.

2. Crumble salmon with your fingers and divide it among cucumber rounds.

3. Whisk together the rest of the ingredients in a small bowl. You can adjust the sauce to be tangier by using more lemon/less honey, or sweeter by using less lemon/more honey depending on your taste preference.

4. Drizzle a drop or two of sauce on each salmon/cucumber round.

5. Serve and enjoy!

SERVING SUGGESTION

These salmon/cucumber rounds make a great hors d'oeuvre to serve at a party. They also pair well with my Lemon Mint Avocado Toast or some Crispy Brussels Sprouts and a bowl of miso soup to make a healthy lunch!
